
BANANA MUFFINS

These muffins are so easy to make, it literally took my 5 minutes to whip up the mixture! They are light and fluffy on the inside, mainly due to the banana which seems to keep them moist, the sprinkling of sugar on the top gives them a sweet little kick. A must try for anyone with a sweet tooth... I love them!

1/3 cup melted coconut oil

1/2 cup maple syrup/honey

2 eggs

1 cup mashed ripe bananas (roughly 3 bananas)

1/4 cup milk

1 tspn baking soda

1 tspn vanilla extract

1/2 tspn salt

1/2 tspn cinnamon

1 3/4 cups whole wheat flour

1/3 cup oats
-
1 tspn sugar (for sprinkling on top)
HOW TO...

Preheat oven to 165c & grease your muffin tin

In a large bowl, beat the coconut oil and maple syrup/honey together with a whisk. Add egg and beat well. Mix in the mashed bananas and milk, followed by the baking soda, vanilla extract, salt and cinnamon.

Add the flour and oats to the bowl and mix with a large spoon until combined. If you want to add any additional mix-ins like chocolate, nuts, dried fruit etc then fold them in now.

Divide the batter evenly between the muffin tins, filling them roughly 2/3's full. Sprinkle the tops of the muffins with a teaspoon of oats followed by a light sprinkling of sugar. Bake muffins for roughly 15 minutes, or until toothpick comes out clean..

Allow the muffins to cool before serving, best served with nut butter or regular butter however I love them as they are!
