
SWEET POTATO BROWNIES

Ewww, sweet potato brownies? Everyone is shocked when I tell them these are full of sweet potato - sounds unusual, I know. These are the best brownies ever, better than the naughty ones. They're super soft and stay soft for days, they are best kept in the fridge! Try them, I promise you, you will not be dissapointed - I doubt you'll ever go back to the none healthy brownies.... I'm addicted to these!!

1 cup mashed sweet potato

1/2 cup smooth nut butter

2 tblspn pure maple syrup

1/4 cup cocoa powder

handful choco chips (optional)
HOW TO...

Preheat oven to 180 degrees, grease a small cake tin and set aside

In a small bowl or over the stove, melt your nut butter with maple syrup. In a large mixing bowl, add mashed sweet potato, nut butter, maple syrup and cocoa powder. (Make sure you mix well and if using chocolate chips fold those in too!)

Transfer mixture into your greased tin and bake for roughly 20 minutes or until cooked through. Remove from oven and leave to cool before eating
These brownies are best kept in the fridge & are freezer friendly too!
